Isaan cuisine is much loved all over Thailand but Isaan cooking is quite different from that of any part of Thailand. The food tends to be more spicy using lots of fresh and dried chillies. We use a lot of ‘Plaa ra’ or salted, fermented fresh water fish for the saltiness in our food instead of the normal fish sauce. Fresh lime is also used to balance the salt and also to give it the zing! This combination is what makes Isaan food so popular.

Som Tum ส้มตำแซ่บ

Originated in Isaan or Laos this dish has become one of the most popular dishes in Thailand. SomTum also known as Tum Bak Hoong in Isaan or Laos is a spicy salad with the main ingredient being shredded unripened green papaya. The dish combines the four main tastes of Thai/ lsaan cuisine: sour from lime and tamarind, hot from fresh and dried chilies, salty from fish sauce or plaa-ra, and sweetness from palm sugar. The ingredients are mixed and pounded using a pestle and mortar.

Apart from the basic ingredients of a Som Tum, such as green beans, tomatoes, garlic and chillies there are also other, not so basic, ingredients which can be added to the dish. Here are some of the popular originals and some of 101 own creation.

What is khao kaeng (ข้าวแกง)?

In Thailand, khao kaeng (can also be spelled “gaeng”) really just means rice curry, and that’s exactly what it is. You get a plate of rice and choose your toppings.

Thai curry refers to dishes in Thai cuisine that are made with various types of curry paste; the term can also refer to the pastes themselves. A Thai curry dish is made from curry paste, coconut milk or water, meat, seafood, vegetables or fruit, and herbs.

Thai green curry might be the signature dish of Thai cuisine. It’s spicy, sweet, aromatic, and packs a punch.

Coconut milk is a key ingredient in most Thai curries, but some are made with water. The most common water-based curry in Thailand is the sour curry (called gaeng som), made with lots of seafood and shrimp paste to flavor the broth. Coconut milk replaced the ghee (clarified butter) traditionally used in Indian curries. It’s essential for green curry: the coconut milk’s sweetness helps cut the heat from the chiles and adds balance.

Stir Fried Dishes ผัดๆเผ็ดๆ

Thai food is internationally famous. Whether chilli-hot or comparatively bland, harmony is the guiding principle behind each dish. Thai cuisine is essentially a marriage of centuries-old Eastern and Western influences harmoniously combined into something uniquely Thai.The characteristics of Thai food depend on who cooks it, for whom it is cooked, for what occasion, and where it is cooked to suit all palates. Originally, Thai cooking reflected the characteristics of a waterborne lifestyle. Aquatic animals, plants and herbs were major ingredients. Large chunks of meat were eschewed. Subsequent influences introduced the use of sizeable chunks to Thai cooking.

Thai Stir fried dishes, Heat the cooking oil, fry in a mixture of crushed chillies, minced garlic, ground pepper and chopped chicken meat. When nearly cooked, add vegetables such as cut beans or eggplants. Season with fish sauce and garnish with kaffir lime leaves, basil or balsom leaves. Cooked rice or fresh noodles added to the frying would make this a substantial meal.

A Thai meal is served all at once, permitting dinners to enjoy complementary combinations of different tastes.
