SOM TUM (ส้มตำ)
Originated in Isaan or Laos this dish has become one of the most popular dishes in Thailand. SomTum also known as Tum Bak Hoong in Isaan or Laos is a spicy salad with the main ingredient being shredded unripened green papaya. The dish combines the four main tastes of Thai/ lsaan cuisine: sour from lime and tamarind, hot from fresh and dried chilies, salty from fish sauce or plaa ra, and sweetness from palm sugar. The ingredients are mixed and pounded using a pestle and mortar. Apart from the basic ingredients of a Som Tum, such as green beans, tomatoes, garlic and chillies there are also other, not so basic, ingredients which can be added to the dish.
